Preparation of functional jelly with extract from the housefly larvae

Abstract:

It has been demonstrated that maggots Musca domestica L.are rich in nutrition, and contain many bioactive substances. Using orthogonal L9(34) and scientific sense evaluation, the best formula for producing jelly was 35% crude extraction from housefly larvae, 15% sugar, 0.18% citric acid and 1.4% carrageenan. The result revealed that 0.02% ascorbic acid plus 0.02% citric acid was the op.timum colour fixative, and 0.04% potassium sorbate was the best preservative.
